煎鱼扒与番茄capers酱 Grilled Fish Fillet w/Tomato Cappers Sauce


- grilled fish ( 150gm )
- marinated the fish fillet first using some salt , w/pepper & ajinamoto
- apply with some plain flour before to egg ( can add some chinese celery to egg )
- use a pan slowly grilled ur fish front & back till cook ...happy cooking :)

- tomato capers sauce
- tomato ( 2nos ) capers ( 1tsp ) blender first
- heat 50gm butter to melted it , add garlic & saute first
- add tomato & cappers ( blender already ) & saute for a while till boiling
- add taste ( salt , ajinamoto , ikan bils stock , shao xing wine , worcester sauce )
- taste first before lastly add some lemon juice

- 煎魚扒
- 魚扒先調味 ( 盐 ,白胡椒粉 ,味精 )
- 魚扒前和后贴面粉才上蛋 ( 可以加芫荽 )
- 用平地鍋小火慢慢煎前和后到熟

- 番茄capers酱
- 番茄( 2nos )capers( 1茶匙 )搅拌器
- 热50gm牛油融化了,加蒜米爆香
- 加入番茄及capers ( 已搅拌 )炒至沸腾
- 增添调味( 绍兴酒 ,盐 ,味精 ,公鱼仔精 ,worcester酱 )
- 先试味 ,最后加入一些柠檬汁

蒸豆酱番茄排骨 Steamed Pork Ribs w/Tau Cheong & Tomatoes

热狗牛肉碎馍与第戎芥末酱 Coney Dog w/Minced Beef & Dijon Mustard Sauce


- sausage you can use any brand or flavour you like , for this dish i use Ayamas cheese flavour sausage

- dijon mustard sauce
- mayonis ( 500gm ) fresh milk ( 90ml ) mustard sauce ( 250ml ) mustard powder ( 3tsp ) worcester sauce ( 4csp ) tobasco / hot sauce ( 4csp ) rice vinegar ( 5csp ) sugar syrup ( 200ml ) fresh plum juice ( 100ml ) tumeric powder ( 4tsp ) butter ( 100gm melted & let cold ) c/parsley ( chopped for garnishing ) mix all together 

- ingredients ( minced beef )
- ingredients 1) - onion ( 1.2kg ) celery ( 600gm ) black pepper powder ( 8tsp )
- ingredients 2) - minced beef ( 10kg )
- ingredients 3) - carrot ( 1.2kg ) mixed herbs ( 8tsp ) bayleaves ( 4tsp ) salt , ajinamoto ( each5tsp ) sugar ( 15tsp )
- ingredients 4) - tomato paste ( 1kg )
- ingredients 5) - tomato puree ( 500gm ) tomato sauce ( 3kg ) paprika powder ( 15tsp ) fresh tomatoes ( 40nos blender tiny )
- ingredients 6) - brown sauce ( 300gm ) ( optional )

- cooking method
- step1) saute all ingredients 1) in a pot first & add some chopped garlic , saute till fragrant
- step2) add ingredients 2) & saute till cooked & dry ( starting it will be watery & later it will dry up )
- step3) add ingredients 3) to cooked for a while first
- step4) add ingredients 4) & saute till fragrant
- step5) add all ingredients 5) to cooked till boiling
- step6) if you dont have ingredients 6) you can skip & your minced beef sauce is ready

- 香肠你可以使用任何一个你喜欢的品牌或味道 ,这个道菜我使用Ayamas芝士味香肠

- 第戎芥末酱
- mayonis( 500gm )鲜奶( 90ml )芥末酱( 250ml )芥末粉( 3茶匙 )worcester酱( 4汤匙 )tobasco / 辣酱( 4汤匙 )米醋( 5汤匙 )糖水( 200ml )新鲜吉子汁( 100ml )姜黄粉( 4汤匙 ) 牛油( 100gm 融化&让冷 )芸茜( 切碎调色 ) 所有材料混合一起

- 材料( 牛肉酱 )
- 材料1)- 西芹( 600gm ) 洋葱 ( 1.2kg ) 黑胡椒粉( 8茶匙 )
- 材料2 )  - 牛肉碎( 10kg )
- 材料3)- 胡萝卜( 1.2kg )混合香草( 8茶匙 )月桂叶( 4茶匙 )盐 ,味精( 各5茶匙 )糖( 15茶匙 )
- 材料4)- 番茄糊( 1kg )
- 材料5)- 番茄精( 500gm )番茄酱( 3kg )红辣椒粉( 15茶匙 )新鲜番茄( 40粒 搅拌器小)
- 材料6)- 棕酱( 300克 )( 可选 )

- 烹饪方法
- 步骤1)先在一个锅里炒香所有材料1)和添加一些切碎的蒜米 ,爆香
- 步骤2)添加材料2)炒香至熟干( 先会好多水份 ,过后它就干 )
- 步骤3)添加所有材料3) 煮一下
- 步骤4)添加材料4)炒香
- 步骤5)加入所有材料5)煮到成沸腾
- 步骤6)如果你没有材料6)就不用  ,你的牛肉酱已准备好了

青椰加哩鸡 Green Coconut Curry Chicken


- green coconut curry chicken
- ready the paste first
- small red onion ( 125gm ) garlic ( 40gm ) ginger ( 20gm ) lemon grass ( 1stick ) curry powder ayam brand ( 40gm ) turmeric powder ( 15gm )
- all ingredients blender with corn oil
- ingredients to cook
- 1) onion , red chilli , green pepper ( roll cut ) few pieces will do
- 2) tomato , cooked potato ( roll cut ) few pieces will do
- 3) coconut milk ( 2csp ) ideal milk ( 2csp )
- 4) chicken leg ( 1nos ) cut into 6pieces
- cooking method
- ready your green coconut first before start cooking , keep all the coconut water
- use green coconut curry chicken paste 2tbsp & saute in a pan till fragrant with some curry leaves & ingredients 1)
- add chicken & keep saute till it start to stick at your pan & add the coconut water ( around two cup )
- wait till boil then add ingredients 2) & 3) to cook ( make sure your chicken is cooked )
- wait till the sauce starting to reduce & thicken up
- pour it into the green coconut to serve

- 青椰加哩鸡
- 先准备糊
- 红小洋葱( 125gm ) 蒜米( 40gm ) 姜( 20gm ) 香茅( 1支 ) 咖喱粉鸡牌( 40gm ) 王姜粉( 15gm )
- 所有材料用玉米油搅拌机 
- 煮的材料
- 1)洋葱 ,红辣椒 ,青椒( 滚切 )几粒就够
- 2)番茄 , 煮熟的马铃薯( 滚切 )几粒就够
- 3)椰酱( 2汤匙 )淡奶( 2汤匙 )
- 4)鸡腿( 一个 )切6块
- 烹饪方法
- 准备好你的青椰先 ,倒青椰的水出来先放一边
- 使青椰加哩鸡糊用2汤匙 ,在锅爆香先 ,加一些咖喱叶和材料1)
- 添加鸡肉和保持炒香 ,直到它开始粘在你的锅 , 加青椰水( 2杯左右 )
- 等到煮沸 ,然后加入材料2)和3)煮
- 等到酱开始减少和浓
- 把所有的材料倒进青耶里就可以上菜
