煎魚扒与海鲜酱 Grilled Fish Fillet w/Seafood Sauce



- seafood sauce
- step1) make stock first - fish bone ( if can use salmon bone ) cabbage , carrot , onion , celery , lemon , ginger & all boil together ( 1hour )
- step2) onion , celery , carrot , green pepper ( cut small dice ) & saute all together with garlic ( chopped ) wait till fragant add tomato paste......let cold and blender ( up to u ) wit fresh tomatoes
- step3) stock step1 ready pour out t soup only add ing in step2)to boil......add ikan bilis stock , shao xing wine , salt , pepper & tomato sauce / puree(colour).......while waiting t soup to boil balance of t stock ing.fish bone ( if gt meat peel out )
- step4) add button mushroom & shao xing wine only

- grilled fish ( 150gm )
- marinated the fish fillet first using some salt , w/pepper & ajinamoto
- apply with some plain flour before to egg ( can add some chinese celery to egg )
- use a pan slowly grilled ur fish front & back till cook ...happy cooking :)

- 海鲜酱
- 步骤1) 准备高汤先
- 准备鱼骨 , 包菜 ,红萝卜 , 西芹 ,洋葱 , 姜 ,柠檬 ( 所有配料一起煲一小时 )
- 步骤2) 红萝卜 ,西芹 ,洋葱 ,青椒 ( 切小 ) & 一起炮香加蒜茸 & 加番茄糊 ( tomato paste )...让冷 & 搅拌机加新鲜番茄
- 步骤3) 高汤准备好了,汤倒出来加配料在步骤2) ,返煲加银魚粉 ,紹興酒 , 盐 ,白胡椒粉 & 番茄精 ( tomato puree )调色..鱼骨如果還有肉就拔開
- 步骤4) 加蘑菇 & 紹興酒

- 煎魚扒 
- 魚扒先調味 ( 盐 ,白胡椒粉 ,味精 )
- 魚扒前和后贴面粉才上蛋 ( 可以加芫荽 )
- 用平地鍋小伙慢慢煎前和后到熟
